Organic Rotisserie Chicken Topped with Pineapple Salsa & Guacamole


Organic Chicken topped with Pineapple Salsa & Guacamole
If you’re running behind on dinner, this is a the perfect meal for you! Its quick and great for the whole family. You can prep the pineapple salsa the day of OR the night before (cover and store in the refrigerator). I even use it just as a dip with my favorite Siete chips! Enjoy! XX

1/2 Pineapple, diced
1 pint Cherry Tomatoes, diced
1/2 Red Onion, diced
2 tbs Fresh Cilantro, chopped
1 Lime, juiced
1 Jalapeno, seeded & diced
Salt to taste
1. Chop & dice all ingredients and place them in a large bowl
2. Add the juice of one lime
3. Add salt to taste
4. Cover and place in the refrigerator until ready to serve

3 Avocados
1/2 Jalapeno, seeded & diced
1/4 White onion, diced
2 tbs Fresh Cilantro, chopped
1 Lime, juiced
1/2 tsp Salt
1. Remove pits from avocados and place avocados in medium sized bowl, mash with fork to desired consistency
2. Remove seeds from jalapeño, chop and place in bowl
3. Dice white onion and place in bowl
4. Finely chop cilantro and place in bowl
5. Squeeze the juice of 1 lime into bowl
6. Season with 1/2 tsp salt

Rotisserie Chicken
1 Organic Rotisserie Chicken- I used Tequila Lime Rotisserie Chicken from Whole Foods- SO GOOD!
