Open Faced Veggie Wrap

Today I made a veggie wrap using Siete’s cassava and chia tortillas… it was fresh, filling and delicious! First, I heated the tortilla on the stove top (about 5 seconds on each side), then topped the tortilla with lettuce, avocado, carrots, sweet peppers and sprouts- try to use organic produce when possible. I ended up leaving the tortilla open faced because I used a lot of vegetables! You can get creative and try different dressings, but I used the fresh Green Goddess dressing from Trader Joes and loved it! This is a quick and simple lunch that is great for the whole family!

Ingredients
1 Siete Cassava & Chia Tortilla- found at Whole Foods, Sprouts or online
1 handful Lettuce, spring mix
1 Avocado, sliced
1/4 cup Carrots, shredded
3 Sweet peppers, diced
1 tbs Spicy Sprouts
1 tbs Green Goddess Dressing- found at Trader Joes

Instructions
1. Warm Wrap on stove top for about 5 seconds on each side
2. Spread dressing on wrap
3. Top with lettuce, avocado, carrots, sweet peppers & sprouts
